The coconuts for our oil are grown in Samoa and Sri
Lanka
Coconut trees (Cocos Nucifera L.) are
found in all tropical regions around the Globe, preferably
close to the cost. The tree grows up to a height of
30 m and carries up to 100 coconuts in one year. Depending
on the size of the coconut the weight of the fresh COCONUTFLESH
varies between 250 –350 gr. per fruit.
The fresh harvested coconut is opened
in two halves and the coconut water gets carefully separated.
The white, nutty coconut flesh (endosperm) contains
around 35% Coconut Oil.
The fresh coconut halves get desiccated
by hand with a router like tool. To get the best quality
oil it is necessary to dry the desiccated coconut immediately.
o minimize the drying period for hygienically
reasons and also to deactivate fat(dissolving) enzymes,
the desiccated coconut is dried on heated metal sheets
or with warm air. The temperatures for the drying are
between 60¡C and 80¡C. The humidity of the coconut flesh
will be reduced to at least 8%.
The extracting of the Virgin Coconut
Oil follows in a lo temperature and pressure mechanical,
expeller extraction method. From this process around
55% Virgin Coconut Oil are extracted.
The Virgin Coconut Oil is separated from
the residue water and paper filter cleaned from any
larger remaining particles. In a closed container the
oil has a shelf life up to 2 years.
